Crispy Ricotta Fried Egg

The new gold standard for fried eggs.

Ingredients:

4 teaspoons Ricotta cheese
1 large egg
Red pepper flakes, to taste
Dried oregano, to taste
1/4 avocado
1 taco-size tortilla, warmed

Directions:

  1. Grease a pan with cooking spray. Sprinkle the ricotta in the pan. Bring to medium heat and allow the cheese to cook undisturbed until just beginning to melt.
  2. Gently crack the egg in the center of the cheese. Then sprinkle the red pepper flakes and dried oregano over the egg. Cook to preferred doneness.
  3. Smash the avocado in a small bowl and spread it across the warmed tortilla. Place the fried egg on top of the avocado. Enjoy!
