Greek Spaghetti

Serves 6 | 
A Mediterranean twist to the Italian favorite.

Ingredients:

1 lb spaghetti noodles
6 tablespoons extra-virgin olive oil
4 cloves garlic, minced
1 1/2 lb Roma tomatoes, seeded and chopped
3 tablespoons drained capers
1/2 cup black olives, sliced
1/4 cup Kalamata olives, sliced
5 oz feta cheese, crumbled
Salt, to taste
Ground black pepper, to taste

Directions:

  1. Cook the spaghetti according to directions on package. Drain the water and transfer the pasta to a large bowl.
  2. Pour olive oil in a saucepan. Bring to medium-low heat. Add the garlic and saut�© for 1 minute.
  3. Pour the garlic over pasta. Add tomatoes, capers, black olives, kalamata olives, and feta. Season with salt and pepper, then toss together.
  4. Divide the spaghetti amongst the serving bowls. Enjoy!
