Baked Cashew Cauliflower

A delectable vegetarian alternative.

Ingredients:

For the Cauliflower:
1 whole cauliflower, washed and cut into florets
1/2 cup cornstarch
1 teaspoon olive oil
For the Sauce:
1/2 cup water
1 teaspoon cornstarch
1/4 cup ketchup
1/4 cup soy sauce
2 tablespoons brown sugar
2 cloves garlic, minced
1 teaspoon grated fresh ginger
1/4 teaspoon dried red chili flakes
1/4 teaspoon black pepper
1 cup unsalted roasted cashews

Directions:

  1. Preheat oven to 350° F. Grease a shallow baking dish with the olive oil. Set aside.
  2. Place the cauliflower in a mixing bowl and pour in the cornstarch. Toss to coat. Shake off any excess cornstarch and transfer the cauliflower to the baking dish.
  3. Place the dish into the oven and bake for 10 minutes. Remove from oven and set aside.
  4. Whisk together the water and cornstarch in a mixing bowl until the cornstarch is fully dissolved. Then add the ketchup, soy sauce, brown sugar, garlic, ginger, red chili flakes and black pepper. Whisk together until incorporated.
  5. Pour the sauce over the cauliflower and gently stir to coat in the sauce.
  6. Return the cauliflower to the oven and bake for 5 minutes. Remove from the oven.
  7. Sprinkle the cashews over the cauliflower and gently stir. Return the cauliflower to the oven and bake for an additional 15 minutes.
  8. Remove the baking dish from the oven. Spoon the cashew cauliflower onto serving plates and enjoy!
