Maple Pecan Roasted Sweet Potatoes

Sweeten up your holiday side dishes!

Ingredients:

2 lb sweet potatoes, sliced
2 tablespoons melted butter
Salt, to taste
Ground black pepper, to taste
1 tablespoons brown sugar
1/4 cup maple syrup
1/2 cup chopped pecans

Directions:

  1. Preheat oven to 450° F. Line a rimmed baking sheet with aluminum foil.
  2. Place sweet potatoes into a mixing bowl and pour melted butter over top. Season with salt and pepper and toss until well coated. Spread sweet potatoes in an even layer on the baking sheet.
  3. Bake for 20 minutes, until the bottoms begin to brown.
  4. Combine brown sugar, maple syrup and chopped pecans in a small bowl. Stir together until well combined.
  5. Remove the baking sheet from the oven and flip the sweet potatoes. Pour the brown sugar- maple syrup mixture evenly over the sweet potatoes.
  6. Place the baking sheet back into the oven and bake for an additional 5 minutes.
