Beefy Gameday Chili

Homemade chili that's both hearty and flavorful.

Ingredients:

3 lb bottom round roast, cut into cubes
2 teaspoons kosher salt
1 teaspoon ground black pepper
1/4 cup canola oil
3 jalapeno peppers, seeded and finely diced
3 yellow onions, diced
4 cloves garlic, minced
3 tablespoons chili powder
1 tablespoon dried oregano
1 tablespoon ground cumin
1 tablespoon brown sugar
1 can chopped tomatoes, 28 oz.
1 can chopped green chiles, 4.5 oz.
1 can black beans, drained and rinsed, 5 oz.

Directions:

  1. Season beef cubes with salt and pepper. Separate into three batches.
  2. Heat oil in a large saute pan over high heat. Add beef to pan and brown 1 batch at a time for about 4 minutes. Transfer beef to a slow cooker after browning.
  3. Reduce heat to medium and add jalapeno, onions, garlic and. Cook for 5 minutes, then transfer to the slow cooker.
  4. Pour chili powder, oregano, cumin, brown sugar, tomatoes, green chiles and black beans into the slow cooker and stir together until well incorporated. Cover and cook on low for 4 hours.
