Crafted from organic cow milk and formed into 15 lb. wheels, the cheese is stored and aged for a minimum of 75 days. At room temperature, the taste is described as nutty and delicate. But when melted, it has notes of roasted garlic, salted brown butter, roasted leeks and heavy cream.
