Warm Up the Skillet for National Fajita Day

Did you know that August 18th is National Fajita Day? This day celebrates the delicious Tex-Mex dish typically made with seasoned grilled meat, onions, and peppers, all served on a warm tortilla. Fajitas originated in the early 1930s when Mexican vaqueros in Southwest Texas received skirt steak—a less expensive cut of beef—as part of their payment from ranchers. These vaqueros began cooking the meat over an open fire. The term “fajita” comes from the Spanish word “faja,” meaning skirt, as it refers to the skirt steak being cut into thin strips. Over time, the popularity of fajitas grew, particularly with the introduction of serving them on a sizzling hot skillet. What started as a simple dish of steak wrapped in corn or flour tortillas with onions, peppers, Pico de Gallo, and guacamole has now become a favorite in countless restaurants across the United States.
