Nutritious and Delicious Asparagus
This Saturday, May 24th, is National Asparagus Day. Established in 2018, this foodie holiday is one of the healthiest on the calendar. Asparagus is rich with vitamins A, B6, E and K, iron, potassium, folate, fiber and antioxidants. As a bonus, asparagus is naturally low in calories, so it’s okay to fill up your plate. Asparagus fans love its versatility. It’s great just about any way it’s prepared, from baked to grilled, fried, roasted, pan seared and even fresh. Did you know that asparagus is one of the oldest cultivated vegetables worldwide. The ancient Greeks used asparagus as offerings as far back as 3000 BC. England and France began growing and harvesting asparagus in the 1600’s and North America began cultivating in the 1800’s.
