Catch of the Day – Rainbow Trout

Bianchini’s Lenten Seafood Festival is going strong. This week we are featuring delicious rainbow trout. This versatile fish delivers incredible taste, texture and flexibility in cooking. Described as having a mild, delicate, almost sweet flavor with slight nutty, buttery undertones. And a tender, flaky texture that lends itself nicely to baking, frying, smoking and even grilling. Rainbow trout get their name from their beautiful coloring. Typically, their body ranges from olive green to brown with a pinkish band that runs the length of their middle, a silver underside that fades to pearl white, and small black spots on their back, fins and tail.
