Pecan Pie Bars

Everything you love about pecan pie, in a small, handheld size!
Ingredients:
For Crust: |
2 2/3 cups flour |
2 sticks unsalted butter |
1/2 teaspoon salt |
2/3 cup brown sugar |
For Pie Filling: |
2 tablespoons heavy cream |
2 cups chopped pecans |
1/3 cup honey |
1 stick unsalted butter |
1 cup light brown sugar |
Directions:
- Preheat oven to 350° F. Line a medium baking pan with aluminum foil. (With 2-inch overhang)
- Cream together 2/3 brown sugar and 2 sticks butter in a mixing bowl. Add salt and flour. Mix together until crumbly.
- Place crust mixture on baking sheet. Place in oven and bake for 20 minutes. (Should be golden brown)
- As crust is baking, mix together heavy cream, honey, 1 stick butter and 1 cup brown sugar in a saucepan. Bring to medium heat and stir together. Simmer for 1 minute, then add chopped pecans.
- Remove crust from oven and pour the pie filling over crust. Place back in oven and bake for 20 additional minutes. Remove from oven and let fully cool.
- Transfer to a cutting board and slice into bars and enjoy.
