French Vanilla Frozen Custard

Serves 6 |
Rich, creamy and packed with vanilla goodness.
Ingredients:
6 eggs |
1 3/4 cups heavy whipping cream |
1 cup erythritol |
1 vanilla bean |
Directions:
- Pour the eggs and heavy whipping cream into a medium pot, bring to low heat. Stir continually until combined.
- Add in the erythritol and stir until dissolved.
- Remove the pot from the heat.
- Slice the vanilla bean in half lengthwise and scrape out the vanilla.
- Add the vanilla scrapings to the pot and stir together.
- Place the lid on the pot and transfer to the refrigerator to chill for two hours.
- Pour the custard into the ice cream maker. Follow the instructions to churn.
- While the custard is in the ice cream maker, line a bread loaf pan with parchment paper.
- Pour into the bread loaf pan. Place into the freezer for several hours until very firm.
- Spoon frozen custard into serving bowls and enjoy!
