Ham, Potato and Egg Scramble

Serves 4 |
Easy to make and incredibly delicious.
|1 cup diced fully cooked ham|
|2 russet potatoes, peeled and diced small|
|1/4 cup sliced green onions|
|2 tablespoons milk|
|1/3 cup butter|
|1/4 teaspoon pepper|
- Melt butter in a large skillet over medium heat. Once hot, add potatoes and onions. Cook for 10 minutes, stirring often.
- In a bowl, beat together eggs, milk and pepper. Mix in diced ham. Pour mixture over potatoes. Cook, without stirring, until mixture begins to set around the edges and on the bottom. Using a large spoon or spatula, lift and fold partially cooked egg mixture so uncooked portion flows underneath. Continue cooking for 4-5 minutes.
