Farfalle Pasta with Grilled Scallions and Tomato

Serves 4 |
A classic Italian style meal with a few tasty additions.
Ingredients:
Salt, (to taste) |
14 whole scallions, chop up 4 |
10 oz Farfalle pasta |
Ground black pepper, (to taste) |
4 plum tomatoes, (peeled, seeded and chopped) |
1/4 cup extra-virgin olive oil, (more for taste) |
1 sausage, chopped |
Directions:
- Combine 1/4 cup of olive oil, the chopped scallions and 3/4 of the chopped plum tomatoes in a food processor. Pulse ingredients to a puree. Season with salt and pepper.
- Heat saucepan to medium. Place whole scallions in saucepan, then drizzle with olive oil and season with salt and pepper.
- Turn heat to high, add sausage to scallions. Cook for 3-4 minutes, until scallions get charred.
- Transfer charred scallions to cutting board and cut into 1-inch pieces.
- Fill a pot with water, bring to a boil. Add Farfalle pasta, cook until al dente.
- Remove pasta from pot, transfer to mixing bowl. Add charred scallion, sausage and scallion puree to pasta, toss together. Season with salt and pepper.
- Spoon pasta onto serving dishes, top with chopped tomatoes and enjoy!
