Lamb:
1 1/2 lb boneless leg of lamb, cut in 1-inch cubes |
16 1-inch chunks of fresh pineapple |
8 bamboo or metal skewers |
1 cup prepared peanut sauce |
- Mix marinade ingredients together in a bowl.
- Coat the lamb cubes with the marinade and refrigerate for at least 4 hours (overnight is best).
- Preheat oven broiler or barbecue.
- Thread the lamb and pineapple pieces alternately onto the skewers. Broil or grill for 8 minutes, turning and basting frequently. (The meat should be light pink in the center).
- Serve at once with the peanut sauce.
