Summer Caprese Salad

The perfect summer caprese salad has four basic ingredients: tomatoes, mozzarella cheese, basil and a drizzle of balsamic vinegar. Caprese salads are both simple and satisfying. Certified Angus Beef Steaks

When it comes to the beef, Certified Angus Beef is hands down the best of the best. Held to the highest standards, only the best cuts of choice and prime can make the grade. Certified Angus Beef steaks have a generous amount marbling, are exceptionally tender, incredibly juicy and bursting with amazing flavor. If you’re grilling this weekend, stop by our meat department and pick up a few steaks with the CAB logo, for the best tasting, most tender steaks available.

How to Prepare the Perfect Steak:
Preheat grill to high.

Remove steak from the refrigerator and let sit for 20-minutes before grilling. Pat dry your steak with paper towels to help evenly sear the outside and retain the steak’s internal moisture while cooking.

Liberally season the steak with kosher salt and ground black pepper. Place steak on the grill and cook for around 4-5 minutes, steak should have a light char. Flip steak over and cook for an additional 3-5 minutes for medium-rare (internal temp. 135 degrees F). For medium, cook for 5-7 minutes (internal temp. 140 degrees F). And for medium-well, cook for 8-10 minutes (internal temp. 150 degrees F).

Remove steak from grill and let sit for 5 minutes before serving.

Fresh Baked Breads from As Kneaded Bakery

Bianchini’s is proud to feature As Kneaded Bakery breads. As Kneaded Bakery is a Community Supported Bakery, a CSB, which is owned and operated by Iliana Imberman Berkowitz. What sets As Kneaded Bakery apart from other bakeries is that their breads contain a natural leavening agent, aka sourdough, or a percentage of the dough contains pre-fermented flour. Both of these grant the breads intricate and complex flavors. Illiana’s love of bread making is what inspired her to open As Kneaded Bakery. She wanted to create a special bakery experience for her customers by making exceptional breads that you can’t get anywhere else. The As Kneaded Bakery offers a fantastic variety of breads, like, crispy French baguettes and Challah, a braided-style bread topped with sesame seeds, along with more original breads, like, Spelt Walnut, Baltic Rye and Flax Sunflower.

L’Etivaz Swiss Cheese & Adopt an Alp

Exclusive to Bianchini’s, L’Etivaz Swiss cheese, imported from Alpe Tompey in the Swiss Alps. This special variety of cheese is Gruyère style, meaning it has a sweet, slightly salty flavor, and a creamy texture. As it matures, the flavors become more assertive, and the cheese develops a slightly grainy texture. Unlike most Gruyère style cheeses, L’Etivaz cheese can only be produced between May 10th through October 10th, and must be produced over an open fire, and then and aged in the L’Etivaz cellars for a minimum of 135 days.

The Zjörien Family, members of the Adopt an Alp program, wakes up very early each morning to make their special L’Etivaz Swiss cheese. Astonishingly, this family can produce 5 to 6, 55 lb. wheels of cheese a day! This nice family was kind enough to allow us to film their cheese making process. We brought back a 3/4 wheel of this special cheese, with more will arriving in November. Bianchini’s has adopted this Alp for the past two years. And in doing so, we’ve had amazing experiences and were given access to specialty cheeses you can’t find anywhere else.

Join the Adopt an Alp program, support transhumance and get rewarded with Alp cheese. Transhumance is the process of moving farmers, their family and the animals to the highlands in the summer and the lowlands in the winter. This ensures that the cows have a varying diet, by not eating the same foods, their milk produces new, natural flavors, which results in a higher quality, better tasting cheese.
